After three years of absence from Guatemala due to COVID (pinche COVID) and family responsibilities in NY, I’ve finally returned… albeit for a quick visit.
Hopefully there will be abundant stories to tell and photos to share in the upcoming days. But for now I wanted to leave you with a photo of a meal that was prepared to welcome me back to the office: pepián!
Made with chicken, potatoes, rice, carrots, green beans, and a vegetable called “güisquil”… along with about a hundred different spices (slight exaggeration)… Pepián is one of Guatemala’s national dishes. And deliciously so.
ps: Don’t forget the tortillas.
